Hunk of Meat Monday: Pizza Casserole

If you’ve ever eaten at my Grandma Bailey’s house, then more than likely you’ve eaten her famous Pizza Casserole. It’s a family favorite and kids and adults both like.

It’s easy. So easy a Husband can do it. (No Ronny, I’m not suggesting you’re a caveman!). The other night I had all of the ingredients for Pizza Casserole and when he asked, “What do you want for dinner?”, I told him I had all of the ingredients and he willingly said he would make it.

So while I got to spend some more time with our little man, he made my favorite casserole. He doubled the amount of cheese it needed, but I won’t blame him for that!

{Pizza Casserole}

Ingredients
1 (12-oz.) bag wide egg noodles
2 lbs. hamburger
1 onion, chopped
2 cans cream of mushroom soup
2 cans tomato soup
1 (6-oz.) pkg. pepperoni
8 oz. mozzarella cheese
½ tsp. garlic salt
Sliced black olives, optional

Directions

  1. Cook noodles to al dente.
  2. While noodles are cooking, brown hamburger and onion together, then drain.
  3. Mix soups and hamburger mix together.
  4. Spray a 11 x 15 casserole dish (or make 2 smaller-sized casseroles – this works great in the freezer!) with cooking oil, then add noodles to the bottom of the pan.
  5. Layer meat mixture on top of noodles, and top with cheese.
  6. Generously layer pepperoni slices on top of cheese. (Add black olives if you want – or add other veggies to make it “supreme”!).
  7. Bake at 350 degrees for 30-35 minutes or until cheese is bubbly.

Christmas Eve | 2012

Ronny and I traveled to Colorado this year for Christmas. Hello mountains!DSC03342

My uncle hosted Christmas Eve at his house and we had some great food and good conversations with my aunts, uncles, cousin and Grams. Unfortunately, Mama got the flu bug and had to stay home. :( But we were able to video chat her in a few times.

We used Grams’ Lennox Christmas china – a great tradition! We also had some other Swedish Christmas traditions mixed in for our Christmas dinner. One of them is courses – Grams usually had a five-course Swedish meal – we only had three this year, but it still counts as a tradition.

We usually eat Lutefisk – white Swedish fish – but this year was prime rib….delish!

For desert we had the traditional Ostkaka (grrr I didn’t take a picture! It is a Swedish cheesecake), peppakakor and sugar cookies.

New this year was a gift exchange for all of the adults. Cousin Katie of course got her own gifts. :)

bulls and blessings.

This Monday was our first bull sale. It’s been a project we’ve been working on for a couple of years and it was awesome to see our hard work rewarded with some high quality Red Angus bulls….and WOW. Were we totally blessed by the support of our customers.

We sold 15 bulls in the sale in which we consigned with Cross Diamond Cattle. You can read about the sale here. The Ford’s and all families involved with this sale are incredible. They are great people who were willing to show us the ropes and get us started in our first sale as Solid Rock Red Angus.

We are excited for this new adventure in our cattle business, although it was kind of hard to see the bulls go. Made me feel better that none of them were going alone – they were going with a “friend” to their new homes.

Mostly, we give thanks to God for this opportunity and adventure. On CHRIST the SOLID ROCK I stand!

Beef Sticky Buns Recipe

This recipe brought me back to my elementary through high school days where Colorado Beef Rolls where the most popular school lunch meal. Basically, they were a cinnamon roll with beef in the inside (instead of cinnamon/sugar) and covered with cheese. So when I saw this recipe for Beef Sticky Buns from the Texas Beef Council, I immediately pinned it on Pinterest.

This grown-up version of the Colorado Beef Rolls I grew up with were excellent with the combination of beef, spinach, cheese and pizza dough.

I filled my dough up a little too much so the dough had a hard time keeping it all in, but they tasted great regardless!

Summer food

In the winter, I really am a comfort food type of girl. I like my mac ‘n cheese, grilled cheese, chili & cinnamon rolls, pot pies, etc. But in the summer, it is really hard to stay away from a cool, fresh salad.

That’s one of the main reasons I decided to plant two types of lettuce in my garden this year.

My first lettuce harvest, I loaded my lettuce with protein-packed grilled beef, feta and fresh strawberries. With a few baby carrots on the side and some cool ranch, it was divine.Garden May 25-2
I recommend a flank steak grilled medium for salads. Here are a bunch of grilled steak salad recipes for your liking.

A Thankful Week

We were blessed to be able to spend some extra time in Colorado for Thanksgiving this year. Since I’ve gotten married, I’ve only been able to spend short weekends here and there at home. Six days was much needed.

As planned, we:

1. Worked cattle. I was the vaccinator!

It got really smoky with the branding and I eventually put on a mask.

And Ronny got to do some branding. In Colorado, it is state law to brand the cattle as a form of identification and required at point of sale.

It was warm enough after working cattle that we ate lunch outside. Pretty rare for this time of year! And Hank serenaded Emily for our after-dinner entertainment.

2. Ate a great Thanksgiving meal!

3. Took a much-needed walk.

I also spent some great time lounging with my sister and sister-in-law while the guys shot guns. I didn’t join them this time. :)

Branding our mark in Nebraska

After State Fair, Ronny and I are really feeling like Nebraskans. I really shouldn’t speak for him, but I was pretty proud to be a Nebraskan and have the opportunity to leave our mark at State Fair with our brand.

When the State Fair moved to Grand Island last year, they started a new tradition in the Barn Bar that cattlemen (and women) could bring their brands and brand a small placard to be hung up in the bar. They had a handful last year, and even more this year. Our friend from Seward who is also a member on the State Fair Board, invited us to attend and bring our brands.

Colorado ranch work

Last week, Ronny and I were in Colorado helping my family AI (artificially inseminate) the registered cow herd. Since this is part of what Ronny does for his profession – he was a big help!IMG_0075

The cattle work and working together as a fam was fun. We enjoyed just a little down time in between the early mornings and late nights, and I got to see my grandma which is always humorous.
